These ten delightful chocolate cookies are great for any occasion, from the simplest picnics to church potlucks or dinner parties. One of my favorite desserts is a scoop of good ice cream with a couple of cookies tucked into the bowl. So fast and simple to make when my focus is getting dinner on the table. And any of these cookies would be the perfect addition!
These ten recipes will give you lots of ideas for fun sweet treats for you and your family and friends. Some using alternative flours, a vegan option, and lots where you can make a simple substitution of a gluten-free flour blend.
I always have a bucket of my flour blend on the counter so I’m ready to make anything I want without having to stop and blend flours. I do this because I am always making fun things for you guys for our weekly Chocolate Mondays.
But for those of you who only bake occasionally, you can use any of the cup-for-cup variety of gluten-free flour blends. Some of my favorites are Bob’s Red Mill 1-to-1 Baking Flour, Pamela’s All-Purpose Flour, King Arthur Measure for Measure flour and Cup-for-Cup flour blend. They can literally be swapped in using the measurements in any recipe.

The key to my success in making gluten free baked goods that no one can tell or cares if they are gluten free is by using Authentic Foods’ super finely ground flours. There is absolutely no grittiness when you use their products!
PRO Tip:
If you want your cookies to bake evenly and be the same size, use a spring-loaded cookie scoop. I can fill a baking sheet in no time with the help of my scoops.

Gluten-Free Tips:
You can adjust any recipe to gluten-free by using 120 grams per cup of my favorite gluten-free flour blend. If you are using another brand of gluten-free flour, whisk the mix, spoon it lightly into a measuring cup until mounded, level off the top with a straight edge, and weigh the flour left in the cup. Use that weight as your standard per cup of that specific flour. Do this for each flour blend you use. Commercial blends such as Pamela’s, Bob’s Red Mill 1-to-1, or King Arthur Measure for Measure are all good choices.
