Bar cookies are some of the easiest desserts to make and are absolutely delicious. Quick, easy to assemble, and easily transportable, they are the perfect dessert if you are bringing something to a party!
One trick is to line the pan with parchment, leaving it hanging over the edges. This creates a sling that helps you lift the bars out of the pan. Then you can cut them easily without damaging your pan and when you’re done, slip them back into the pan for transportation or storage.

Gluten-Free Tips:
To convert recipes to gluten-free, substitute with GF ingredients where possible. You can adjust any recipe to gluten-free by using 120 grams of my favorite gluten-free flour blend per cup. If you are using another brand of gluten-free flour, whisk the mix, spoon it lightly into a measuring cup until mounded, level off the top with a straight edge, and weigh the flour. Use that weight as your standard per cup of that specific flour. Commercial blends such as Pamela’s, Bob’s Red Mill 1-to-1, or King Arthur Measure for Measure are all good choices.
